As a festival which only receives small amounts of local funding and is run solely by fantastic volunteers We rely on multiple fundraisers throughout the year to ensure we have enough funds to put on the spectacle of a weekend that Balstock is every year. Traditional Lancashire Hotpot Savour the slow-cooked flavours of the North with a traditional Lancashire hotpot recipe. Season 500g of lamb chops and layer them in a heavy casserole dish with sliced onions. Pour over 400ml of rich lamb stock. Thinly slice three large baking potatoes and arrange them in overlapping layers on top of the meat like scales. Brush the potato layer with melted butter and dust with sea salt.
